Avocado Toast

This creamy avocado toast is power packed with healthy fats and fiber to start your morning right!

Equipment

  • Toaster Oven

Ingredients

  • 2 slices sourdough bread
  • 1 whole avocado, pitted and sliced
  • 1 Tbsp sun-dried tomato spread
  • 1/2 tsp sesame seeds, not toasted
  • 1/2 tsp chia seeds
  • 1/4 tsp red pepper flakes
  • 1/4 tsp sea salt

Instructions

  • Slice and pit the avocado and set aside.
  • Toast bread; for this recipe, I like light to medium toast 🙂
  • While the bread is toasting, combine sesame seeds, chia seeds, red pepper flakes, and sea salt. Mix well.
  • Once toasted, spread the sun-dried tomato spread equally over both slices of bread.
  • Arrange one-half of the avocado slices on one slice. Repeat for the second slice.
  • Sprinkle seasoning mixture over both slices.

Notes

  • The measurements are approximations, you can add more or less of the spices to fit your tastes.
  • This toast is equally good without the tomato spread. When I was pregnant everything gave me heartburn so I tried to limit acidic foods like tomatoes so I got accustomed to eating the toast without the spread.
  • Other types of bread will work, but sourdough is the way to go if you want to maintain a vegan recipe!
