Healthy Avocado Toast Origin Story: Edinburgh, Scotland
I fell in love with this gem of a dish while vacationing with a good friend in Edinburgh, Scotland. Before I had my babies, when I was teaching, I would have a considerable chunk of time off during the summer months. My friend and I would plan and save up for a big vacation each yearāusually, weād travel somewhere in Europe (where my heart lies), but sometimes weād venture to Canada or touristy places within the United States.
One such summer, we traveled to Edinburgh, Scotland. I cannot say enough wonderful things about Edinburgh. It is a really beautiful city and one that has truly stuck with me over the years.

ā¦Iād be remiss if I didnāt share a few details about the city!
The city is entirely walkable (which I loved) and even though we visited during late June, the weather was cool (around 65Ā°F which, in my opinion, is absolutely perfect for touring!) Also, the city has a very young vibe and there are plenty of vegetarian and vegan restaurants which was surprising.
Fun Fact: J.K Rowling was inspired by the city of Edinburgh and wrote some of the Harry Potter Series while staying there.
If you are a Harry Potter fan, you will want to visit Edinburgh! Thereās an entire Harry Potter and J.K. Rowling walking tour (which we did, of course!) where you get to see the spots where Rowling wrote the books along with tons of real-life places that inspired things in the book (like Diagon Alley and names of characters).

The Meet Cute: Hula Juice CafƩ
Our Airbnb host recommended Hula Juice CafƩ, a trendy, healthy eatery that serves breakfast and lunch. We loved it so much that we ended up eating breakfast there our entire stay.
That first morning I ordered their version of avocado toast not knowing what to expect.
Avocado toast is always a wildcard item because each and every restaurant prepares it differently. I took a chance on it and Iām soooooo glad I did.
Two thick slices of crusty sourdough bread spread with fresh, smashed avocado, drizzled with tomato oil, lime, and āHulaā mix (a combo of sea salt, chili flakes, and chia and sesame seeds).

In the years since, Iāve tried avocado toast in many other placesāincluding various cities in the U.S., Canada, London, Madridā¦you get the ideaāand nothing beats the version I had in Edinburgh.

This recipe is my version of Huluās avocado toast. I love it for breakfast, lunch, or even dinner (if Iām eating by myself and want a quick meal).

Avocado Toast
Equipment
- Toaster Oven
Ingredients
- 2 slices sourdough bread
- 1 whole avocado, pitted and sliced
- 1 Tbsp sun-dried tomato spread
- 1/2 tsp sesame seeds, not toasted
- 1/2 tsp chia seeds
- 1/4 tsp red pepper flakes
- 1/4 tsp sea salt
Instructions
- Slice and pit the avocado and set aside.
- Toast bread; for this recipe, I like light to medium toast
- While the bread is toasting, combine sesame seeds, chia seeds, red pepper flakes, and sea salt. Mix well.
- Once toasted, spread the sun-dried tomato spread equally over both slices of bread.
- Arrange one-half of the avocado slices on one slice. Repeat for the second slice.
- Sprinkle seasoning mixture over both slices.
Notes
- The measurements are approximations, you can add more or less of the spices to fit your tastes.
- This toast is equally good without the tomato spread. When I was pregnant everything gave me heartburn so I tried to limit acidic foods like tomatoes so I got accustomed to eating the toast without the spread.
- Other types of bread will work, but sourdough is the way to go if you want to maintain a vegan recipe!
